Pepsin is a substance containing a proteolytic enzyme obtained from the glandular layer of the fresh stomach of the hog. A suitable diluent (lactose, sucrose or lower power powder) is added to adjust the enzyme activity to that specified if allowed. This product is a white or light dust colored amorphous powder.
